Adventures in Healthy Eating
So I've been working with a registered dietician for a month now and her suggestion is for me to go gluten free to see if that improves my eczema. So today I made chicken salad and put it in a lettuce wrap. Unfortunately I was not gentle enough with the lettuce leaf and ripped it, so I had to double up. And, note to self: Pat the lettuce dry before you fill it, because when I picked it up water went all over my plate. But all in all it was pretty yummy and it's good to have an alternate to bread for a sandwich, because the ready-made gluten free loaves of bread (which are 1/2 the size/length of normal loaves of bread) cost around $6 a loaf! And even the flour is ridiculous. I can buy 5 lbs of regular all purpose flour for around $2-3, but I can only get 1/2 that much for anywhere to $3-5 for the gluten free variety. Luckily I enjoy a large variety of foods, including fruits and vegetables, so even though I've been having to think outside of my normal box for meals, it has been an adventure!
